Antique Safe Computing Cheese Cutter, Circa 1905, Cast Iron Hoop Cheese Cutter.
Designed to be used in cheese shops, mercantile stores, farm markets and delicatessens. Commercial cheese cutter was revolutionary in that it measured the amount of cheese and was computed by rotating the handle. Often referred to as a hoop cheese cutter it resembled a turntable with a knife blade suspended about it.

How it works: There\'s a dial next to the handle that has incremented numbers on it. Place the cheese wheel (a full one) on the wooden board, make a small cut and lift the blade. Adjust to whatever number you want to select; this will rotate the board slightly (a lower number makes a smaller rotation and a smaller piece). Then bring the blade down one more time to cut. The dial is ratcheting.
The cutter still retains all of its original components, including the wooden board and cast iron base. The wooden board still has the metal dividers/teeth to hold the cheese block , but they are worn down level to the wood platform.
The wooden wheel measures almost 16\" in diameter and the blade measures 7 12\" top to bottom. It weighs in at 29 pounds.I\'m not sure how to calibrate the wheel which really shouldn\'t be necessary if its being used for display purposes.
